Simple Fall Dinner Recipes

The fall season is a perfect time to experiment with different recipes and hearty dishes.
One of the most popular fall recipes is homemade vegetable soup. This dish is very hearty and makes you feel really warm. One of the best things about homemade vegetable soup is that you can make it a lot of different ways.

One of the easiest ways to make it is by combining chicken broth with fresh cut up vegetables. Although you can use any vegetables you want, most people like to use celery, green beans, corn and tomatoes. It usually takes the broth and vegetable combination about two hours to fully cook. If you want to some additional flavor in your soup, add in some nutmeg and grilled corn. The nutmeg will give it a slight sweet taste and the grilled corn will add a smooth smoky flavor. In addition, adding in a tablespoon of flour will make the soup thicker.

This soup will taste great on a fall afternoon with a garden salad and seasoned brown rice.
Another favorite fall dinner recipe is stuffed meatloaf. Although ground beef has more flavor, most people today like to use ground turkey because it contains less fat and calories. You start by mashing a pound of ground turkey in a large bowl. Then you add in some black pepper and salt. Next add in a teaspoon of paprika and a cup of crushed crackers. Thoroughly mix all the ingredients together and then add in two eggs to help hold all the ingredients together. Next rollout the meatloaf mixture on a large sheet of plastic wrap. Having the meatloaf mixture rolled out will make it easier to add in the stuffing.

For the stuffing mixture, grill some vegetables in a pan with a tablespoon of olive oil. Add in some salt and pepper for flavor. Once the vegetables have finished cooking sprinkle on some shredded pieces of cheese. Spoon the cooked ingredients evenly onto the meatloaf mixture. Next take the end of plastic wrap and slowly start rolling the meat mixture into a loaf shape. The plastic wrap will keep the meat from sticking to your fingers. Afterward place the loaf in a greased baking pan. The meatloaf should take about thirty five minutes to bake in a three hundred and twenty five degree oven.

When you cut the meatloaf you will be able to see all the grilled vegetables and melted cheese inside. You can serve the meatloaf with some grilled corn and baked red potatoes. Or, if you want something more heartier to go with the meatloaf, try some buttermilk mashed potatoes and fresh French cut beans.
